Doc Baron’s “Food for the Soul” is the inspiration of Robert Barron, a life-long restaurant industry wonk, foodie and culinary school of hard knocks graduate. Doc Baron’s will work with local farmers to supply fresh ingredients to an ever-changing menu that will reflect our love of food and Colorado.

While wild game bratwurst, European style hot dogs & fresh ground burgers will be our staples, we will routinely prepare mouthwatering items like our Bacon Wrapped Tommy Sam (fresh smoke turkey sandwich), the Bitter Ends Brisket Grilled Cheese (smoked brisket on a grilled cheese) , PBLTO (pronounced pu-blee-toe – that’s thick cut Pork Belly, Lettuce, Tomato & Onion).

And from our fryers, we will be serving up all manner of fried goodness, like our homemade tots (can’t call them Tater Tots, that’s a trademark of Ore-Ida! Who knew?), or the Ooey-Gooey Mac n’ Cheese Balls. And we will routinely be rotating our french fry selection – garlic, parmesan, pepper, truffle, sweet potato… the list goes on.

So now that you’re starving, you’re probably asking, “Where can I find ‘Food for the Soul’??” Well, that’s the thing… we are a work in progress. In order to prove ‘proof of concept’, we are just starting and we’re starting small – with a food cart. Once we hit a predetermined level, we will graduate to a full-fledged truck. Once we reach our second level, we will add a brick and mortar location.
